Another easy, but delicious, idea would be a mixture of shredded coconut, cream cheese and whipped topping beaten together to the appropriate consistency for filling the cups.
To further enhance the health benefits of the chocolate, you might fill your cup with a mixture of low-fat cream cheese and fat free whipped topping, adorned with a small piece of your favorite fresh fruit.
